What Is Gozinaki?
Gozinaki is the ancient Georgian tradition of caramelised nuts and seeds pressed into sheets or clusters. The technique is centuries old. La Chocoallure takes that tradition, applies European milk chocolate technique, and adds one final touch of cocoa nibs that changes everything.
The Cocoa Nib Effect
Cocoa nibs are what chocolate is made from before sugar and dairy are added — raw, lightly roasted fragments of cacao bean, intensely chocolatey, bitter, with earthy and fruity notes. Scattered across the milk chocolate exterior of each gozinaki chunk, they add visual drama, textural crunch, and flavour complexity. Each bite is a different experience — caramel sweetness, milk chocolate creaminess, and then the sudden intensity of the cacao nib.
The La Chocoallure Version
We build the gozinaki base from glucose, honey, and corn syrup cooked to precise temperature, then break it into irregular golden chunks that maintain their crunch even after being dipped in milk chocolate. The chocolate is applied generously. Then come the cocoa nibs — each piece looks artisanal because it is artisanal.
