The Gozinaki Base
Drawing from the ancient Georgian tradition of honey-caramel confectionery, La Chocoallure's gozinaki is made by cooking glucose, honey, and corn syrup together to precise temperature, then setting it into golden, crispy chunks. The caramel is deep and complex — floral from the honey, with the buttery roundness that comes from a perfectly executed hard caramel. These chunks are then swirled into smooth milk chocolate for a base that's extraordinary even before the pistachio and salt are added.
The Pistachio
Premium pistachios are pressed into the milk chocolate exterior while it's still at the setting point, becoming part of the piece rather than just sitting on top. Pistachios add crunch, flavour, and a beautiful natural green that makes each piece visually striking.
