What Is Honeycomb?
Honeycomb — also known as cinder toffee, sponge candy, or hokey pokey depending on where you're from — is made by cooking sugar and honey to hard-crack temperature, then adding sodium bicarbonate at the critical moment. The bicarb causes the hot toffee to foam violently, trapping millions of tiny air bubbles before the structure sets. The result is a rigid, honeycombed piece of caramelised candy that's light, airy, and intensely sweet — with a shattering crunch that's deeply satisfying.
The Acacia Honey
We use acacia honey — lighter and more floral than common wildflower honey — to give the honeycomb a cleaner, more delicate sweetness. Cooked with sugar to precise temperature, it ensures both the structural integrity of the final piece and the development of deep caramel flavour.
The Milk Chocolate Shell
MIlk Chocolate — not compound, not cocoa-flavoured coating — provides the outer shell. Its slight bitterness is the perfect contrast to the intense sweetness of the honeycomb inside.
